Most of my fermentation recipes are based on quart-sized jars. Any of my recipes can be scaled up or down depending on the size of the container you are fermenting in. Use the quick guide above to determine how many grams of salt you will need for the amount of water necessary to fill your container. It is important that the salt is completely dissolved in the water before pouring it over your vegetables. The salt will dissolve more quickly if you warm the water first but it will need to cool completely before adding it to your fermenting vessel.
